Easy Spinach Pancakes With Oat Flour (Gluten Free)

The season has started – behind the house we have a whole greenhouse of young spinach, and you can also find it at local markets.✨

My child loves to eat pancakes of all kinds – but not the classic thin and big pancakes, but these small and thick ones. That’s where oat flour comes in play because it changes the texture of these spinach pancakes, making them easier to chew (and digest!) compared to many other types of flour you can use.

They are ideal for his handle and he always eats two or three per meal. We usually eat them either for breakfast or for lunch, but they are also great for dinner. They do not fall hard on the small stomach.

But, of course, these are not only pancakes for our little ones, but also for us big ones. It depends on the mood, sometimes I eat them together with Noah along the way, and sometimes, as I agreed to paint today, I eat them with some dip or spread, vegetables and boiled eggs. I make a real nutritious meal that I eat with my fork instead of my hand.✨

Making spinach pancakes is always an excellent idea because of how nutritious they are, and using oat flour instead of the regular flour can only be a good thing since oat flour is gluten free.

Spinach Pancakes With Oat Flour

  • 150 g cooked spinach
  • 150 g oat flour
  • 1 egg
  • 2 dcl liquid yogurt
  • 1-2 tbsp baking powder
  • pinch of salt
  1. Preparing spinach pancakes with oat flour is simple and easy. Start by weighing the cooked spinach. You need 150g and then you will puree it.

  2. Add all the other ingredients to the spinach puree and combine them in a blender or whisk.

  3. Heat the pan to keep it warm, oil it a little and take out the small pancakes on it.

  4. Bake each side for about two minutes.

  5. Serve alone or with a spread as desired. Your oat flour spinach pancakes are ready to be served!
