Oat Flour Gnocchi With Cauliflower Recipe!

These oat flour gnocchi will absolutely delight everyone who made them. You have to try them and see for yourself. They are soft as clouds and do not fall hard on the stomach and digestion. They are suitable for both vegans and people who are sensitive to gluten.

Preparing your oat flour gnocchi is not too complicated but you need a little longer to prepare, but no more than for ordinary gnocchi with potatoes. It is necessary to steam the cauliflower and drain it well so that as much liquid as possible comes out. It is then mixed oatmeal flour, as well as a bit of tapioca starch to make everything balanced. They are cooked like classic gnocchi and love frying.

One of the most amazing things about these simple oat flour gnocchi is (not only how fabulous they taste!) but their nutritional properties. They’re easy to digest and contain many times more fiber and protein, compared to regular flour.

The soluble fiber oat flour contains is beneficial for your digestive tract, and they’re rich with a number of minerals such as manganese, phosphorus, magnesium and copper!

Cooking the gnocchi with oat flour will give them a chewier and crumblier texture, and adding cauliflower will add them a more nutty flavor with sweet undertones – a perfect alternative to meat.

How To Prepare Your Oat Flour Gnocchi

To prepare your oat flour gnocchi the right way, please follow my instructions in the recipe below. You only need a couple of ingredients and cooking them will be sweet and easy job!

Oat Flour Gnocchi

  • 1 cauliflower ((white part only))
  • 2 tbsp oatmeal flour
  • 3 tbsp tapioca starch
  • 1/2 tsp salt
  1. To start preparing your oat flour gnocchi, cut the cauliflower into pieces and steam it.

  2. Allow it to cool slightly, then transfer to a clean cloth / gauze, close all sides and knead with your hands or squeeze out excess liquid. The more fluid comes out, the better.

  3. Transfer the squeezed cauliflower to a mixer and mix briefly. There should be no pieces left. You should get about one cup of puree. Transfer to a bowl, add oat flour, tapioca starch and salt and knead into a dough. Do not knead for too long, it is enough to combine the ingredients and it does not fall apart but maintains compactness (keep in mind that it will be a little more sticky than the classic dough).

  4. Transfer to a floured surface, shape into a ball and cut into four equal parts. Roll each piece into a roll and cut the gnocchi of the same size.

  5. In a large bowl, boil the water with the salt, put the gnocchi (not all at once!) And let it boil briefly (40-60 seconds). When they rise to the surface, take them out in a strainer and sprinkle a little oil so that they do not stick.

  6. Put butter (vegan or plain) in the pan and add chopped sage, fry briefly, then add the gnocchi and fry for a few moments, until they get a crispy crust. I definitely recommend this procedure (otherwise the gnocchi are quite sticky).

  7. Serve your oat flour gnocchi alone or with the addition of your favorite sauce.
