Once upon a time it was considered a dish for the poor, and the French today call it a soup over soups. Even if you are not a big fan of onions – this mouth-watering low sodium onion soup mix has a rich and divine taste which will win you over instantly.
Low sodium onion soup mix is a classic for several reasons. While it may require patience due to the caramelization of onions, it is actually a simple recipe that does not require any experience in French cuisine at all.
The ingredients are quite simple: onion, olive oil, butter, salt, pepper, garlic, and the hardest or hardest part is actually softening all the onions, but with the first tablespoon of this invigorating soup – everything will be worth it!
Perfectly caramelized onions, crispy baguettes and melted cheese make this soup ideal for winter days!
Why Is Low Sodium Healthy?
Everyone knows that a diet high in sodium can lead to health problems, including an increased risk of cardiovascular disease.
Low sodium diets have been proven to help lower your chances of strokes and heart failure.
However, always make sure to check your food labels first! While “Low sodium” means a serving has 140 mg or less of sodium, there is also “Light sodium” and “reduced sodium” which mean that there is 25% less sodium than what the food normally has.
My Homemade Low Sodium Onion Soup Mix Recipe
Because many low- or no-sodium foods can lack flavor, in creating this recipe I had to look for ways to increase flavor without resorting to an extra toss of the salt shaker. That’s why this onion soup mix has a lot of vegetables in it, including bay leaves and thyme.
It is important to roast your vegetables under the broiler before adding them to the soup.
Low Sodium Onion Soup Mix
- 2 tbsp butter
- 1 kg onions ((about 5 bigger onions))
- 2 cloves garlic
- 1/3 cup of 0.2L white win
- 1L vegetable foundation
- 3 tbsp olive oil
- 2 bay leaves
- 1 thyme ((fresh or dried))
- 2 tbsp balsamic vinegar
- 1 baguette bread ((gluten free, optional))
- 150 g grated cheese ((swiss cheese or hard cheese such as gruyere, pecorino, grana padano is recommended))
- pinch of pepper
Start preparing your low sodium onion soup mix by melting the butter in a large pot over medium heat. Add the chopped onion, reduce the heat and cook for about half an hour, stirring every few minutes. After the onion is very soft, increase the heat to medium and cook for a few more minutes, stirring often, until the onion turns golden brown.
Add garlic, and after a minute, wine, thyme, bay leaf and stock. When everything boils, reduce the heat, cook for another 15 minutes and stir occasionally.
Add balsamic vinegar, sprinkle and pepper and remove the bay leaf.
Coat both sides of the baguette with a little olive oil, place them on a baking tray lined with baking paper and bake in an oven preheated to 220 degrees for 5 minutes, then add the grated cheese to the bread slices and bake for a few more minutes until the cheese melts. Serve with soup.
