Tasty Low GI Gluten Free Bread Recipe

Spring and warm afternoons and enjoyment in the yard are back to us, and with it all comes food, some wine, coffee or whatever suits you for a complete experience.

These days I’m dreaming of a trip, so I put together a hearty plate and baked homemade bread, but this time the gluten-free one that came to my rehearsal recently.

May is the month of celiac disease and I personally know a few people who are on a gluten-free diet and often many of you ask me for gluten-free recipes (there are several on the blog), but here I recommend one product that I tried, and that is this gluten-free flour that can be used to make bread, but also pizza or cake dough, whatever you want.

I love this gluten free bread because it’s low GI. Low glycemic foods help with weight loss and blood sugar. This may help lower the risk of conditions like type 2 diabetes and heart diseases. We eat bread everyday, so it’s rare to be able to make bread that’s not only gluten free, but has a low gi value.

I have tried it several times in the form of bread and it is really refined, fragrant, with a crispy crust, holes, it is special.

Low GI Gluten Free Bread Recipe

To get started with my recipe for this low-GI gluten free bread, follow my instructions below.

Low GI Gluten Free Bread

  • 500 g gluten free flour
  • 10 g olive oil
  • 1 bag dry yeast
  • 440 ml lukewarm water
  • 1-2 tbsp salt ((I prefer saltier))
  1. Start preparing this fabulous low GI gluten free bread by putting all of the ingredients in a bowl of a mixer and knead the dough (you can also knead it by hand).

  2. Transfer the dough to a well-oiled pan, then cover it and leave it on warm to rise until it doubles in size.

  3. Transfer the dough to a lightly floured surface and shape it into bread or pizza or pastry dough, rolls.

  4. As I was making the bread I shaped it into a circle and moved it to a large baking tray lined with greaseproof baking paper.

  5. Coat the top of the bread with olive oil, then cover it with a damp cloth and let it rise.

  6. During this time, turn the oven to 190C and let it heat up.

  7. When the oven has warmed up remove the cloth and place the baked bread in the oven.

  8. Bake it for about 20-30 minutes, depending on the oven, and your low-GI gluten free bread will be ready to go!
