Homemade Walnut Cake With Almond Flour

One of my mom’s favorite cakes is a walnut cake made of almond flour. Growing up this recipe was so special to her because it was her grandma who would often make it for her. One day, she shared it with me, written on a special blue envelope which I carefully placed with all of my other recipes, and today I decided I want to share this recipe with you.✨

Cake made from walnuts are always a great idea. Walnuts are not just extremely healthy, rich in antioxidants, a super plant source of omega-3s, decrease inflammation, reduce risk of cancer and promote a healthy gut – they also go amazingly well with many other foods and nuts because of their mild but tangy flavor with sharp notes.

In the same way, almond flour is a perfect addition to walnuts with lots of healthy fats, fiber, protein, magnesium and vitamin E, and a great way to make a cake gluten free.

And together, they are just perfect!

Walnut Cake With Almond Flour

My almond flour walnut cake recipe is completely homemade, and shouldn’t take too much of your time. I’d say if you have all the ingredients, this cake can be done in less than an hour.

To get started with this splendid recipe for a walnut cake with almond flour, follow my instructions below.

Walnut Cake With Almond Flour

  • 2 eggs
  • 140 g coconut sugar
  • 120 ml almond oil
  • 150 ml vegan milk
  • 80 g almond flour
  • 60 g semolina
  • 80 g ground walnuts
  • 1/2 baking powder
  • few tsbp jam
  • few tbsp ground walnuts
  1. Start preparing your almond flour walnut cake by preheating the oven to 180C.

  2. Line the bottom of the 18-20 cm diameter mold with greaseproof baking paper and lightly grease the sides.

  3. Combine all ingredients with a whisk (no need to mix anything), pour into a mold and bake in a preheated oven for about 30-40 minutes, depending on the oven.

  4. If the cake got a cap, or rose that way, feel free to flatten it when it cools down a bit by cutting off the top with a knife.

  5. Coat the cake with jam as desired, we spread mostly apricot or plum jam, then sprinkle with ground walnuts.

  6. Voila! Your walnut cake with almond flour is ready to be served!
