Old Fashioned Fig Cake Recipe

A recipe worthy of being on a blog. This old fashioned fig cake made of figs, vanilla and walnuts won the palate of her mother, for whose birthday she was prepared, but also of other tasters.

The idea was to combine walnuts and figs into a cake that doesn’t bake. But I was afraid that the figs would get lost in the cashew cream if I just mixed them up.

So I decided to make this cake the way my grandma used to make – the old fashioned way – with a quick jam to taste the figs and highlight them. You may notice that the cake is not raw but also not baked, which is also completely OK.

Walnut base gives this authentic fig cake a note of nutty, full and rich taste while vanilla cream with the addition of citrus notes lifts and refreshes this slightly filling cake.

My recipe for this old fashioned fig cake is simple to follow. To get started, simply follow my instructions below.

Old Fashioned Fig Cake Recipe

Base

  • 1+1/2 cups dates
  • 1+1/2 cups walnuts
  • pinch of salt
  • 1/4 tsp anise powder (optional)

Fig Jam

  • 8-9 figs
  • 1 tbsp lemon juice
  • 1 tsp coconut sugar

Vanilla Cream

  • 1+1/2 cups cashews
  • 1/3+2 cup+tbsp rice malt
  • 2 tbsp lemon juice
  • 1/2+2 cup+tbsp herbal drink (I used soy)
  • 1/3 cup coconut oil (melted)
  • 2 tsp vanilla extract
  1. Start preparing this old fashioned fig cake by soaking the cashews overnight.

  2. Line the mold with baking paper and oil.

  3. Soak the dates briefly in hot water and strain them when they soften. Grind the walnuts in a blender and add the remaining ingredients and mix into a sticky mixture. Transfer to a mold, press evenly and place in the refrigerator.

  4. Put halved figs in a cooking pot and add the remaining ingredients. Cook over low heat until completely softened, lightly kneading with a food processor. Using a stick mixer (or transfer to a blender), mix gently and allow to cool.

  5. Wash and drain the cashews and put them in a blender with the remaining ingredients. Mix until you get a smooth, silky cream. Taste and add more sweeteners, lemon juice and / or vanilla.

  6. Place chilled figs on the base. Flatten and put in the freezer for 10 minutes. Remove the mold and pour over the vanilla cream. Return to the freezer for a minimum of 2 hours. Keep in the freezer and remove for 30 minutes before thawing to thaw.

  7. Enjoy! This traditional fig cake is ready to be served! ????
