Which would you rather choose – waffles or pancakes? I have to admit that I like waffles somehow, but I do them less often because I don’t have a waffle machine anymore.
But last week at the store I came across silicone waffle molds and grabbed them right away. Admittedly, they are egg-shaped because they were on sale on Easter, but they are great for making waffles in the oven. They bake a bit longer than the ones in the waffle machine, but they are really great, crispy on the outside, soft on the inside, fluffy. Just the way I like it!
Why Use Greek Yogurt In My Waffles?
Instead of preparing my waffles the usual way, this time I wanted to do something special and prepare them the healthy way; with low carb and Greek yogurt!
Everybody knows how fulfilling waffles can be, and that may not help our tummies at all. But there are soo many benefits to Greek yogurt, from boosting our metabolism, gut health to lowering blood pressure and countless more. This combination was quite perfect because Greek yogurt can be an amazing substitute for other ingredients and reduce the total amount of carbs.❤️
So I knew I had to add them into the mix with my waffles, and I decided to experiment. What I created ended up being perfect waffles – that have little to no carb, that are gluten free, sugar free, and that have Greek yogurt in them – and yet they taste soo good!
These waffles are best served with fresh fruit and topped with maple or agave syrup or honey.
Low Carb Greek Yogurt Waffles
Preparing Greek yogurt waffles with little to no carb is easy-peasy, and takes less than 15 minutes total time. You only need a couple of ingredients and your waffles will be done in no time!
Follow my recipe below to get started.
Low Carb Greek Yogurt Waffles
- 1 cup millet flour
- 1 cup vanilla soy drink ((can be another drink or milk))
- 1 tbsp agave syrup (other sweetener)
- 1/2 cup plain greek yogurt
- 2 large eggs
- 1 tbsp baking powder
- 2 tbsp melted coconut oil
Preheat oven to 180 degrees. Place the silicone waffle mold on the baking tray.
Mix all ingredients into a smooth, lump-free mixture. Pour into a silicone waffle mold or if you don't have to use a waffle maker.
Bake in a preheated oven for 8 minutes, then turn over on a baking sheet and remove from the silicone mold and bake with the other side for another 3 minutes (be careful not to burn yourself). If you find it difficult to separate from silicone mold, let still bake briefly, should be easily taken out.
Serve your low carb Greek yogurt waffles warm with filling as desired.
