Time flies so fast, but it is important to celebrate special occasions such as birthdays. Whether it’s for a dear person in your life or your such a dessert lover, cakes are always the best way to go! And because of that, this time I’ve prepared the best ever coconut birthday cake! ❤️

Another in a series of raw cakes, an irresistible combination of coconut and chocolate will make your mouth water.

Best Coconut Birthday Cake Recipe

My recipe for this amazing coconut birthday cake is simple to follow. Of course, making cakes takes more time than other types of food, but it is all worth it in the end and I’d say your special loved one whose birthday you’re celebrating will be more than excited when he/she tries such an amazing birthday cake, made from one of the most delicious fruits – coconuts ❤️

To get started with this simple recipe, follow my instructions below.

Best Coconut Birthday Cake Recipe

Base

  • 1 cup blanched almonds
  • 2 cups grated coconut
  • 1/3 cup melted coconut oil
  • 1/4 cup agave syrup
  • 1/2 tsp vanilla extract

Chocolate Cream

  • 2 cups soaked cashews (overnight or minimum 4 hours)
  • 1/2 cup coconut milk
  • 5 tbsp cocoa powder
  • 1/4 cup agave syrup
  • 5 tbsp melted cocoa butter

Coconut Cream

  • 1+1/2 cups soaked cashews (overnight or minimum 4 hours)
  • 1 cup coconut milk
  • 3 tbsp coconut flakes
  • 2 tbsp coconut butter
  • 1/4 cup agave syrup
  1. Start preparing your best ever coconut birthday cake by lining a mold (I used 20 cm in diameter) with baking paper or oil. Grind almonds in a mixer/blender and add the remaining ingredients. Mix until you get a mixture that sticks to the touch. Transfer to a mold and flatten. Refrigerate while preparing the creams.

  2. Put all the chocolate cream ingredients in a blender. Mix until you get a thick cream without lumps. If necessary, add more liquids. It definitely depends on what kind of blender you have, the stronger the cream the sooner it will be ready. Save 1/3 cup (maybe less) of decorating cream, pour over the base, flatten and refrigerate.

  3. Wash the blender and put all the coconut cream ingredients in the blender. Repeat the procedure as for the chocolate cream. Remove the mold, pour over the coconut cream, flatten and place in the freezer for 3-4 hours or overnight. At least an hour before serving, remove the cake and decorate with the rest of the cream (which you kept covered in the refrigerator), coconut flakes, melted chocolate, almonds…

  4. Voila! Your coconut birthday cake is done and ready to be served! What an easy recipe, right? You can keep the cake in the refrigerator if you eat it within 2-3 days.

* If you haven’t soaked the cashews overnight or you can’t soak them for four hours, you can always boil them until they soften and wash well afterwards (the cake will not be raw)
